Lettuce cups – I like romaine or radicchio for color
For garnish: chopped scallions & sesame seeds
Instructions
Place the chicken, full breasts, into a crock pot. In a bowl, mix the remaining ingredients and pour over the chicken. Cook on LOW 3-4 hours. Using 2 forks, shred the chicken right in the crock pot. Let heat through and serve in lettuce cups with chopped scallions and sesame seeds for garnish.
Modifications for:
Elimination Diet – use Coconut Aminos vs wheat free tamari
Anti-Candida Diet – use Coconut Aminos vs wheat free tamari + apple Cider vinegar vs rice wine vinegar
Ketogenic Diet – ok as is, however will want to serve with added fats (avocado, shredded organic cheese)
