Ingredients

  • 1 lb ground turkey
  • 2 sweet potatoes, medium organic
  • 1 bell pepper, diced organic
  • 1/2 red onion, diced
  • 4 cups chopped kale organic
  • 1 can black beans drained
  • 2 tsp cumin
  • 2 tsp cayenne pepper
  • 2 tsp garlic powder
  • 2 tsp rosemary dried
  • salt (Himalayan) and pepper to taste
  • 4 tbsp avocado oil
  • olive oil to drizzle at the end extra virgin, 1st cold pressed

Instructions

  1. Preheat oven to 425F. Chop sweet potatoes into small cubes (~1 inch). Place them on an oven-safe pan, coat in avocado oil, salt, and pepper, and roast for 30 mins in the oven.

  2. Begin cooking the ground turkey in avocado oil in a large pot or pan over medium heat with salt and pepper to taste.

  3. Dice the bell pepper and red onion while waiting for the turkey to cook.

  4. Once the turkey is fully cooked, turn to low heat and add the kale, red onion, bell pepper, black beans, and seasonings.

  5. Stir the mixture periodically while cooking over low-medium heat until all veggies are soft.

  6. Serve over arugula or another leafy green with the sweet potatoes, olive oil, salt, and optional lime or lemon juice.

Recipe Notes

Any green can be used as a base of this meal. Add fresh basil or cilantro for extra flavor and nutrients.
