
Rainbow Veggie Sautee with Turkey
Ingredients
- 1 cup broccoli chopped
- 1 cup cauliflower chopped
- 1/2 cup leeks chopped
- 2 large carrots shredded or diced
- 1 cup red cabbage chopped
- 1 cup ground turkey
- 1 cup chickpeas
- 4 tsp garlic powder
- 2 tsp ground ginger
- 3 tsp dried thyme
- 2 tbsp ghee
- salt and pepper to taste
Instructions

Cook the ground turkey in ghee, salt, pepper, and 1 tsp garlic.

Chop/shred the vegetables.

Cook the vegetables and chickpeas in ghee and all seasonings until soft, then add in the ground turkey in the last few minutes of cooking.
