Rainbow Veggie Sautee with Turkey

Ingredients

  • 1 cup broccoli chopped
  • 1 cup cauliflower chopped
  • 1/2 cup leeks chopped
  • 2 large carrots shredded or diced
  • 1 cup red cabbage chopped
  • 1 cup ground turkey
  • 1 cup chickpeas
  • 4 tsp garlic powder
  • 2 tsp ground ginger
  • 3 tsp dried thyme
  • 2 tbsp ghee
  • salt and pepper to taste

Instructions

  1. Cook the ground turkey in ghee, salt, pepper, and 1 tsp garlic.

  2. Chop/shred the vegetables.

  3. Cook the vegetables and chickpeas in ghee and all seasonings until soft, then add in the ground turkey in the last few minutes of cooking.
