Super Greens Smoothie

works best in NutriBullet or MagicBullet (more milkshake-like consistency)

Calories 250 kcal

Ingredients

  • 2 handfuls organic spinach and/or kale
  • ½ organic cucumber peeled and sliced
  • 1 serving vanilla collagen protein powder
  • 1 cup unsweetened coconut milk
  • 1 scoop Stevia extract powder more or less to taste – this is very concentrated
  • 1 Tblsp MCT oil
  • ¼ tsp xanthan or agar gum to help thicken it
  • Ice cubes as desired, to create consistency desired

Instructions

  1. Add all ingredients to the NutriBullet or MagicBullet. Blend for ~1 minute or until the consistency is where you want it. Add more or less ice cubes to assist.

Modifications for:

  1. Elimination, Ketogenic or Anti-Candida Diet – recipe good as is
  2. Low Histamine Diet – use kale vs spinach
  3. Low FODMAP Diet – use unsweetened almond vs coconut milk + omit the gums for thickening
