Easy Asian Sesame Chicken

Calories 200 kcal

Ingredients

  • 2 pounds chicken breasts
  • 1/3 cup wheat-free tamari
  • 2 tbsp raw honey
  • 1 / 4 cup organic tomato paste
  • 3 tbsp rice wine vinegar
  • 2-4 cloves garlic minced
  • 1 tbsp water
  • 1 tsp sesame oil
  • 2 tbsp minced onion
  • Lettuce cups – I like romaine or radicchio for color
  • For garnish: chopped scallions & sesame seeds

Instructions

  1. Place the chicken, full breasts, into a crock pot. In a bowl, mix the remaining ingredients and pour over the chicken. Cook on LOW 3-4 hours. Using 2 forks, shred the chicken right in the crock pot. Let heat through and serve in lettuce cups with chopped scallions and sesame seeds for garnish.

Modifications for:

  1. Elimination Diet – use Coconut Aminos vs wheat free tamari
  2. Anti-Candida Diet – use Coconut Aminos vs wheat free tamari + apple Cider vinegar vs rice wine vinegar
  3. Ketogenic Diet – ok as is, however will want to serve with added fats (avocado, shredded organic cheese)

Growing up I was overweight and ate a diet made up of convenient, processed foods. Then, when I was 16 years old, I had a tonsillectomy that resulted in weight loss. Seeing that I actually had muscle beneath my fat was enough to inspire me to abandon the unhealthy habits I had learned — I started exercising regularly, preparing nutritious meals and moving toward a holistic way of living.

As happy as I was about my new way of life, I was even more ecstatic when I learned I could make a career out of helping others do the same.
