Chocolate Peppermint Brownies (with a hidden surprise!)
Ingredients
- 1 can (15oz) black beans
- 1/2 cup rolled oats organic, gluten free
- 1/2 cup maple syrup
- 1/3 cup coconut oil virgin
- 1/4 cup cacao powder
- 2 tsp vanilla extract
- 1/4 tsp baking soda
- 1 tsp peppermint extract
- 1/4-1/2 cup dark chocolate chips Ghiradelli brand preferred
- 1/4 tsp sea salt Himalayan
Instructions

Preheat oven to 400F.

Add black beans and oats to a food processor or blender. Blend until until finely ground.

Add the maple syrup and coconut oil, and blend until well combined.

Add the rest of the ingredients, other than the chocolate chips, and blend until it becomes a brownie batter consistency (may need to scrape the sides of the blender/stir).

Pour the batter into a greased 10×4 pan. Sprinkle the chocolate chips over the top. Bake for ~15 minutes (until a toothpick comes out clean).

Slice and enjoy! Best kept in an airtight container in the fridge.
