Sweet Potato Nachos

Ingredients

  • 4 sweet potatoes small-medium, organic
  • 1 lb ground turkey pastured (ideal)
  • 2 avocados
  • 1 packet Siete taco seasoning
  • cilantro to taste
  • pico de gallo spicy or mild, organic, to taste
  • 1 lime
  • 2-4 tbsp avocado oil
  • himalayan sea salt to taste
  • black pepper to taste

Instructions

  1. Wash and cut sweet potatoes into thin circular slices.

  2. Roast sweet potatoes on a sheet pan in 1-3 Tblsp avocado oil, salt, and pepper at 425F for 30 minutes.

  3. While the sweet potatoes roast, cook ground turkey in 1 Tblsp avocado oil. Once it is fully cooked, lower the temperature, add 1/3c water, and 1 packet of Siete taco seasoning.

  4. Stir ground turkey with the seasoning until it is evenly coated and no water remains.

  5. Once the sweet potatoes are done, add the toppings: ground turkey, avocado, cilantro, fresh lime juice, and pico de gallo. Enjoy!

Recipe Notes

You can modify the toppings based on whatever is preferred, such as shredded organic cheese, olives, or jalapenos. This would pair well with a side of a non-starchy vegetable (raw or cooked), such as broccoli, cauliflower, bell pepper, or brussels sprouts.
